Side Project Imperial Stout aged in 2 Rye Whiskey Barrels & Blended with Coffee beans from 5 Local Roasters on 3/30!

This Saturday, March 30th, BOTH The Side Project Cellar and the Brewery Tasting Room will be tapping a delicious Side Project Imperial Stout aged in two Rye Whiskey Barrels + that base beer blended with different coffee beans from five local St. Louis roasters! It’s always fun for people to decide which coffee bean works best with the beer and to pick your favorites! Here’s the tapping schedule:

AT OPEN: Side Project Omega : Barrels 127 & 128 (Tapping at 12pm at Brewery, 1pm at Cellar)

This is the Base Imperial Stout for all beers below. The base beer will be tapped at Open at both locations, so tapped at our 12pm Open at the Brewery Tasting Room and at our 1pm Open at The Side Project Cellar. This year, it is a blend of Barrels 127 & 128, which is one of our Imperial Stout recipes that was used to create Shared Barrel-Aged Coconut Vibes and Side Project Derivation Blend #11. It is brewed with 7 different malts and fermented with a blend of yeast strains and was aged in Rittenhouse Rye Barrels for 18 months before being used for this project. 15% ABV

We are gathering the regions, bean tasting notes, etc... for each coffee bean so you'll be able to compare the beers with information about each bean! Cory got a little too excited at Sump and Kaldi’s this year and chose TWO different beans from each of them, so The SP Cellar and Brewery Tasting Room will have different coffee beans on draft for the Sump blend and Kaldi’s blend.

We'll see you this weekend! You do NOT need tickets to visit The Side Project Cellar or Brewery tasting room. You can purchase each stout separately. Please note both the Brewery tasting room (Open 12-7pm) and The Side Project Cellar (Open 1-11pm) are open regular business hours this Saturday.

Le Feu Vert - Our Barrel-Aged Farmhouse Pale Collaboration with Blake Tyers of Creature Comforts Brewing Co.

In the summer of 2017, it was our pleasure to have Blake Tyers of Creature Comforts at the brewery to spend some time, brew some wort and then share some beers and food as we began the process to create Le Feu Vert. Le Feu Vert translates to “The Green Light,” a play on the hoppiness that we wanted to assert through this beer and also the Edison bulb that is shared in both of our logos.

Blake and I share inspiration from the classic, traditional, rustic beers of Belgium. Although our Side Project culture has migrated toward a more lively, vibrant and tart profile, we wanted to try to push it back, slow it down, and create something that resembled a more “rustic” flavor profile.

We brewed a Barrel-Aged Farmhouse-inspired Pale Ale with Pilsner malt, two types of wheat, oats and spelt. We hopped it aggressively with aged Styrian hops and fresh Citra to merge old- and new-world ingredients and then fermented it with a blend of our house Saison yeast and local Missouri microflora. Being the hoppiest beer we have used our mixed culture on to date, we knew that an extended aging period in French Oak White Wine barrels was going to be needed for everything to come into a balanced harmony. Le Feu Vert was aged for 15 months in oak and then bottled conditioned for an additional 5 months before being ready to be shared with you. The result is a deep, layered, funky beer that exhibits the profile of Side Project, but with more rustic, hoppy, classic Belgian roots.

This Saturday at both locations, we will have bottles of Le Feu Vert available to go. Bottles will be $30 for a 750mL and allocations will be based on the turnout. As always, if you are in line by the start of the release (noon at The Brewery and 1pm at The Cellar), we will have an allocation for you.

SEVEN Variants of Péché Mortel on Sat 3/23 for Péché Day 2019!

We are thrilled to announce that Dieu du Ciel! Péché Day 2019 is happening in St. Louis Saturday, March 23rd, at The Side Project Cellar! If you aren’t familiar with the delicious Péché Mortel, it is a 9.5% ABV Imperial Coffee Stout that we often pour on a NITRO Tap at The Side Project Cellar. Here is a description from DieuDuCiel.com:

“A deep, dark and profound stout. Espresso coffee is infused during the brewing of Péché Mortel, resulting in an intense dark beer with roasted malt flavors enhanced by bitter coffee. The dry finish is long and persistent… First brewed in our Montréal brewpub in October of 2001.”

The first Péché Day took place in November 2011 at the Dieu Du Ciel! Montreal pub. It has since evolved into an international event with about 60 participants worldwide! The Side Project Cellar is honored to be among them this year. Péché Day will feature SEVEN variants of Péché Mortel at each participating location. From Dieu du Ciel!:

Pulling Nails Blend #9 Release - March 9th, 2019

We are excited to share with you of our next blend of Pulling Nails. Blend #9 continues to focus on using our diverse sour, tart, funky and oak-aged barrel stock to create a unique beer which couldn’t be produced without the blending of these individual threads. A little more of an assertive Brettanomyces presence is softened by the Blackberry and Vidal Blanc portions to define what Pulling Nails Blend #9 is.

The Official Blend:

  • 32% Thicket - Missouri Wild Ale aged on Blackberries for more than a year

  • 18% Oude du Blé - Missouri Wheat Saison - 13 months in oak

  • 20% Foedre #7 - Initial fill date - September 1st, 2017

  • 15% Méthode Traditionnelle - Coolship Inoculated & Spontaneously fermented - 2 years in oak

  • 15% Missouri Saison with Missouri Vidal Blanc Grapes - 1 year in oak

Parking - Just as a reminder, our brewery parking lot will fill early, but there is a huge, free parking lot a block away from our brewery at 7373 Marietta Avenue. We invite you to please use this parking lot or the plentiful public parking and refrain from using any private lots in Maplewood.

Bottle Sharing - Bottle sharing is welcome but can only take place on our property! Please! No open bottles on the public sidewalks or anywhere outside of our property, it is illegal in Maplewood and you can get a ticket! Only our property is licensed for outdoor open containers.
