Brett Venture

The Brett Venture series is the exploration of how single strains of Brettanomyces ferment and condition a Saison malt bill. Each Brett Venture was fermented in and aged in wine barrels with a different Brettanomyces strain to showcase its unique characteristics.

Brett Venture #2 with Lactobacillus showcases the Brettanomyces Drie strain from BSI out of Colorado. It was fermented 100% with this Brettanomcyes strain as well as a Lactobacillus strain for 10 months in a red wine barrel.

Brett Venture #2 without Lactobacillus showcases the Brettanomyces Drie strain from BSI out of Colorado. It was fermented 100% with this Brettanomcyes strain for 9 months in a red wine barrel.

Brett Venture #1 with Lactobacillus is the exploration of how a unique, single strain of Brettanomyces Bruxellensis from Brussels, Belgium, fermented and conditions a Saison malt bill. This ale was 100% fermented in and aged in wine barrels 10 months with Brettanomyces before being naturally conditioned in the bottle.
