Beer : Barrel : Time 2021 Blend
Side Project Brewing is excited to announce the 2021 release of our non-adjunct, Barrel-Aged Imperial Stout that focuses on three key things that really exemplify Side Project – the Beer we brew, the Barrels we age the beer in and the Time spent in those barrels.
Before we describe what Beer : Barrel : Time 2021 consists of, we wanted to pull some information from our very first BBT blog post from 2017 to explain what BBT is and why we brew it…
* * * To kick off our first larger Barrel-Aged Imperial Stout release, we wanted to showcase why our brewers first fell in love with this style and the purity of what beer does when aged in our favorite barrels for the amount of time it tells us it needs.
Adjuncts are very popular (and we all know Cory loves adjuncts and loves brewing stouts with them!), but we feel as though before we start trying to produce larger batches of our adjunct stouts, we want what may be the first Side Project Barrel-Aged Stout that many of you try to be of its purest form, nothing hiding behind any integrated ingredients. We want the vanilla, the coconut, the chocolates and all of the other lovely flavors found in this style to come from our process, our recipes, our barrels, our blending and our time.

The barrel stock we tasted through to choose the 2021 BBT blend is the exact same stock that we pull from for the Derivations and all of our stouts. We have brewed 17 different stout recipes, aged them in a variety of barrels, and then always thoughtfully selected and blended to achieve our goals, whether it be Beer : Barrel : Time, a new blend of Derivation or the Barrel-Aged Stouts by Shared Brewing.
For Beer : Barrel : Time 2021, we chose a blend of our stout recipes that consists of:
- Stout Recipe Names – O.W.K., Vibes, Gen, Chocolate
- Barrels – Eagle Rare, Blanton’s, Willett Bourbon, 4 Roses OBSV, Weller 12 year, Jim Beam
- Time Aged in Oak – 14 to 42 months
We believe BBT 2021 showcases the rich chocolate and sweet coconut notes of this massive style while also providing the needed roundness and integration of the bourbon and oak characteristics to produce a harmonious experience.

Side Project Tête de Cuvée Vintage 2019 / 750ml Bottle
This blend consists of threads of the Saison du Fermier recipe which were aged for more than one year in oak, thus becoming Oude Fermier. The blend consisted of four brews of Oude Fermier aged in White Burgundy barrels, Neutral French Oak Puncheons, a Neutral Missouri Oak Foedre, a lightly toasted Missouri Oak Foedre and 225 Liter California Chardonnay Barrels for 13 to 20 months. -
Side Project Pulling Nails Blend #13 / 750ml Bottle
The union of Saison du Fermier finished exclusively with Missouri Brettanomyces strains in Missouri Oak, a Blond Missouri Wild Ale finished in French Oak, and our solera-method Coexpressionalism base, which was then blended and naturally conditioned in this bottle for several months. -
Side Project La Ruche Blend #4 / 750ml Bottle
Missouri Saison fermented using a blend of our local microflora and a traditional Saison yeast. Northwestern Meadowfoam Honey with its notes of vanilla cupcakes, was added to this soft beer for refermentation in a Missouri Oak Foedre and was aged for four months before being naturally conditioned in this bottle. We also just found out today that La Ruche has been selected as one of Wine Enthusiast’s Top 50 Beers for 2021! -

Purchasing Details:
Packages of BBT 2021 will be available to purchase TO GO via our web site only. The bottles will go live in our online shop Monday, November 1, 2021 at 10:00am CST. www.sideprojectbrewing.com/shop. We will use the @SideProjectBrew Instagram to post when the shop is live.
- You must be 21 years old to purchase BBT.
- You are only allowed to purchase one package TOTAL per person. This will spread the bottles out to as many people as possible. If you purchase more than one package, ALL of your purchases will be refunded – no exceptions. Make sure there is only 1 package in your cart at checkout!
- You can purchase ONE of THREE options based on when you’d like to pick up your BBT package. ALL OF THESE PICK UPS WILL TAKE PLACE AT SIDE PROJECT BREWING AT 7458 Manchester Ave. in Maplewood.

- Proxy Pick Ups are Allowed. One person may pick up for a maximum of 5 total people (including themselves). We do ask that you come on the appropriate weekend to spread out the traffic.
- There is no physical BBT “ticket." If you’ve picked up an online order with us before, the process is the same. You will need your order number with the corresponding name to pick up the order.
- Purchases are non-refundable and must be picked up on the weekend specified.
MORE EXCITEMENT DURING PICK UP DAYS:
We chose November to release Beer : Barrel : Time because it is that special time of year to get together with your family and friends. We invite you to come visit us and share beers with your loved ones at Side Project Brewing and The Side Project Cellar. We do allow food on the cozy patio at The Side Project Cellar to enjoy with your Side Project beer (or whiskey, wine or cider). We also now allow food inside our Brewery Tasting Room since we knocked down an entire wall and made it a more open-air space. We’re excited to see you in November for our favorite time of year!
- Side Project Beer : Barrel : Time 2021 will also be available for on-site enjoyment (on draft or in on-site bottles) at Side Project Brewing and The Side Project Cellar every pick up day!
- We will have some fun beers available throughout the 3-week pick-up period at both locations!
