What began as a dream and a side project has now grown into our 100% barrel-aged brewery. Passion, experimentation and patience drive the creation of our rustic Saisons, Wild Ales and Spirit Barrel-Aged Ales. As we share our craft with you, we hope you share it with your friends as well.
Owner & Brewer
Cory’s first love in the beverage industry was for wine, and that passion can be seen in his oak-aged beers at Side Project. He originally sought a career in winemaking, but he decided to start homebrewing after his brother-in-law introduced him to the craft. Discovering that experimentation with fermentation and interpretations of beer styles could be explored in the kitchen, he was hooked on brewing. His love for oak began with wine and is now his focus with all the beers at Side Project Brewing. Cory appreciates traveling with his family to breweries, wineries and distilleries all over the world and learning as much as he possibly can.
Owner & Organizer
Karen was introduced to the world of beer by her older brother Brian Ivers when he started homebrewing while they were students at Oklahoma State. After several big family homebrew days and many beer vacations to visit breweries across the country, she had decided on a career in beer. She has been fortunate to work for and learn from the incredible breweries Deschutes Brewery, Goose Island Beer Company and Perennial Artisan Ales. She loves to organize and drink De La Senne Taras Boulba and is happy to be putting both of those loves to good use at Side Project Brewing. If Karen isn’t spending time with her redheaded husband and two sons, she’s probably walking around The Side Project Cellar with notebooks and highlighters.
Production Manager & Brewer
Tommy’s Great Uncle “Magic Jim” was a Brewmaster at Anheuser-Busch for about 30 years. So you could definitely say brewing runs in the Manning family! He worked as the Production Manager at local St. Louis brewery Perennial Artisan Ales before joining the brewing team at Side Project Brewing. He enjoys being with his partner in crime & wife Rachel and traveling to tropical destinations with plentiful tiki drinks. Tommy also likes to cook and hang out with his dog while savoring a nice beer, bourbon or bottle of wine!
Drew is a recent transplant from Austin where he spent the past 30 years melting. His brewing career launched at the magnificent Live Oak Brewing Company, and he then helped open and served as head brewer at The Brewer’s Table before putting in brewing turns at Lazarus Brewing. While he no doubt loves and misses his Austin family (and his actual family), he is incredibly honored to contribute to and become a part of the Side Project family. If you hear metal music blasting out of the brewery, that is probably him. Say hello (don’t honk) if you catch him riding his bike around town.
Side Project Cellar Manager & Merch Manager
Shae is really into beer, whiskey, grilled cheese sandwiches and cats. But mostly cats. She grew up in a very small town in Illinois where beer choices were almost nonexistent. Her first sip of Bell’s Two Hearted Ale changed her world, and beer has been a huge part of her life ever since. She takes every day as a new learning experience full of new beers to try! When she’s not enjoying a beer or whiskey, she’s chugging La Croix, lying on the couch with her dog Panda, two cats Leia and Winston, and watching Harry Potter. (Seriously, she has a Harry Potter tattoo!)
Megan is a lifelong St. Louisian and devoted industry professional. She first fell in love with wine as a restaurant manager maintaining a 3,000-bottle cellar, but she quickly realized all the magic that whiskey and beer had to offer. Megan is now excited to be immersed in the beer world at Side Project to expand her knowledge of the brewing and fermentation process. When she’s not smiling behind the bar at The Side Project Cellar, you might find her kayaking into the sunset along the Missouri River, cleaning her backyard chicken coop, navigating the Northampton streets with her pugs Skillet and Coconut or writing run-on sentences….
Rachel was born and raised in St. Louis, and she has several years experience in fine dining. After working for some of the best chefs in St. Louis, Rachel found herself immersed in the beer community working for a local brewery Perennial Artisan Ales as their Events Manager. It was then that she knew she was in love with everything the beer community had to offer! Rachel is extremely proud of the team that Side Project has built, especially since her husband, Tommy, is one of the brewers! When Rachel isn't working, you may find her sipping a cocktail at The Royale or enjoying a burger at home & hanging with her dog Garth. Rachel never shares a burger, but she will always share a few drinks!
Brewery Tasting Room Manager
Allison was born and raised in the snow-covered land of Minnesota. After graduating from the University of Minnesota-Twin Cities, she began working for The Flaming Lips and moved to Oklahoma to thaw out a bit. Craving more opportunity, she moved to Austin, Texas, where she linked up with the Hill Country brewery, Thirsty Planet. After several years of selling, bottling, marketing and drinking beer in Texas, she followed her heart to St. Louis. Now you can find her doing yoga, sipping a sour, pickling vegetables and hanging out with her urban chickens in her sweet new city.
Side Project Cellar, Brewery Tasting Room & Warehouse Logistics
Mikey is a Metro East native who is thrilled to be back in St. Louis after 11 years in Chicago. He started his craft beer career with Goose Island Beer Company, and he feels so lucky to be a part of the Side Project family. He graduated from DePaul University where he studied Communications and Theatre. On his days off, you can find Mikey having a drink at Side Project or The Royale (where he also works), exploring amazing food in the city or singing karaoke to Disney princess songs.
Brewery Tasting Room
Dominique is a Louisiana transplant who is now fully rooted in St. Louis City since her move in 2013. She works full time as an art therapist and garden specialist at a domestic violence agency in Belleville, Il. Her first job in the restaurant industry was at an amazing Cajun restaurant that held a Zydeco brunch every Saturday for a raucous time of live music, dancing, eating and drinking. Since then, Dominique has always kept some involvement in the industry through the years and can't imagine it any other way. When the opportunity to join the Side Project family arose, she was thrilled! Dominique enjoys going on adventures with her husband Joe and dog Gus or hanging at home with their pet rabbit Remi.
The Side Project Cellar
Rich grew up on the East Coast and traveled the country during his career as a pipefitter. After living in eight different states, he is now settled in St. Louis with his girlfriend Andi, son Floyd and one-eyed dog named Penelope. Rich is a huge whiskey nerd and lover of prosciutto, but he is also a big fan of White Claws, Coors Banquet and Wendy’s spicy chicken nuggets. He is a huge sneakerhead with more than 100 pairs in his collection! Rich began his brewery career at 4 Hands Brewery and joined the Side Project team in 2019.
The Side Project Cellar
Audrey’s career in the beverage industry began at a winery in Augusta, Mo., where she worked for six years. She grew up in Washington, Mo., and remains very close with her family – she has an identical twin sister named Lauren. Audrey is also an artist and now lives in St. Louis and spends her free time painting, drawing and ballroom dancing. She’s always loved to ride bikes and worked in a bike shop for the last five years. Audrey joined the Side Project team in 2019 and now we’re happy she’s riding one of her seven bikes to The Side Project Cellar for work every weekend!
Tim is a commercial photographer who also takes care of all things creative at Side Project, including the beer labels, web design and photography. Tim had his first crayon in his hands at 2 years old and had already added a camera by age 11. He worked in advertising as an Art Director of global brands for more than a decade, and he now works with a mix of clients ranging from international to startup. Tim is always creating and strives to design the best content he possibly can to strengthen brands. When he isn’t working as a commercial photographer or searching for the perfect shot at Side Project, he’s spending time playing with his daughters or attempting to relax with his wife.
