Oak Aged Missouri Farmhouse Ale
à la Table is inspired by the classic Saisons of the past, meant to be shared "at the Table" with family and friends. Traditionally brewed to be low in alcohol and extremely refreshing, this inspired Saison was brewed with an airy and fluffy malt bill and fermented with wild Missouri yeast and bacteria and our house Saison blend before being aged in Missouri oak for several months and then being naturally conditioned in this bottle.

Bière Blanche
Foedre Aged Witbier
Bière Blanche is inspired by the witbiers of Belgium brewed with large amounts of wheat and spiced with coriander and orange peel. The soft palate and low bitterness of this witbier is perfect for aging in Chardonnay barrels with our local microflora, which added a ripe, citrus acidity to this vibrant beer. This refreshing witbier aged in wine barrels for more than a year before it was naturally conditioned in this bottle.

Bière du Pays

Bière du Pays is inspired by the classic Saisons from the country. An airy and fluffy malt bill is fermented with wild Missouri yeast and bacteria and our house Saison blend. This refreshing and delicate farmhouse ale was aged in Missouri oak for several months before it was naturally conditioned in this bottle.

Raspberry Bière du Pays
Wine Barrel Aged Black Raspberry Farmhouse Ale
Raspberry Bière du Pays is our restrained approach to a fruited Saison. We added a thoughtful amount of Black Raspberries to our Bière du Pays to not cloud the nuances of our lovely, little beer, but to add a layer of soft fruit and color for a new experience. Our Missouri yeast and bacteria provide the layers of complexity to this farmhouse ale that was aged in oak for several months before being naturally conditioned in the bottle.

Grisette
Foedre Aged Farmhouse Ale
Grisette is inspired by the soft session beers of Belgium. The blond color, notes of floral European hops and delicate, bright finish create a complex, yet very approachable beer. This farmhouse-inspired table beer was aged in a Missouri oak foedre for several months before being naturally conditioned in this bottle.

Dry-hopped Grisette
Dry Hopped Foedre Aged Farmhouse Ale
As we have evolved, we have looked for ways to continue to elevate and experiment with our favorite beers. Grisette is inspired by the soft session beers of Belgium with it's blond color, notes of floral European hops and delicate, bright finish. For this iteration, we gently dry-hopped this complex, yet very approachable beer after aging it in a Missouri Oak Foedre for several months before naturally conditioning it in this bottle.

La Ruche
Oak Aged Missouri Saison with Honey
La Ruche is a delicate Missouri Saison fermented using a blend of our local microflora and a traditional Saison yeast. Meadowfoam Honey was added to this soft beer for refermentation in a Missouri Oak Foedre and was aged to maturity before being naturally conditioned in this bottle.

Le Saisonnier
Wine Barrel Fermented Missouri Saison
Le Saisonnier is named after the seasonal workers for which the first, old-world Saisons were originally made. Brewed with European malts and hops and fermented in and aged in wine barrels for 10 months with a blend of Missouri yeast and bacteria, before being naturally conditioned in this bottle.

Dry-hopped Le Saisonnier
Dry-hopped Wine Barrel Fermented Missouri Saison
Le Saisonnier is named after the seasonal workers for which the first, old-world Saisons were originally made. We brewed this table beer with European malts, hopped it assertively with European hops and then aged it in a Missouri Oak Foedre for 6 months with a blend of Missouri microflora to create a delicate, yet expressive experience from this naturally conditioned beer.

Wine Barrel Aged Farmhouse Pale Ale
Marietta Ave. is our Farmhouse Pale Ale that was fermented in and aged in French Oak Puncheons with Belgian Saison yeast and a blend of soft Brettanomyces strains. It was brewed with floral and citrusy American hops and naturally conditioned in this bottle for several months.

Marietta Ave. is our Farmhouse Pale Ale that was fermented in and aged in French Oak Puncheons for more than a year with Belgian Saison yeast and a blend of soft Brettanomyces strains. It was brewed with floral and citrusy American hops and naturally conditioned in this bottle for several months before being released.

Wine Barrel Aged Missouri Wheat Saison
Saison du Blé is the harmony of a fluffy Wheat Saison and a tart, Missouri Saison. The wheat balances a very dry body with a creamy, billowy mouthfeel, and our local microflora adds complexity and acidity. This Saison was aged in Chardonnay barrels for several months before being naturally conditioned in this bottle.

Rosé du Blè
Missouri Saison aged in a Missouri Foedre
Rosé du Blé is our Wheat Saison that is fermented with wild Brettanomyces and Lactobacillus from our family’s farm and aged in our Missouri Oak Foedre. At maturity, it was racked atop the skins of Raspberries and a small touch of Hibiscus, adding the color, tannins and aromatics inspired by the rosé wines of France.

Saison du Fermier is the harmony of new and old. It is robust and has the paler color of modern Saisons, yet it is balanced with the brightness, depth and rustic character of the wild Brettanomyces and Lactobacillus found on our family’s Missouri farm. This farmhouse ale was fermented in and aged in wine barrels for several months.

Saison du Fermier is the harmony of new and old. It is robust and has the paler color of modern Saisons, yet it is balanced with the brightness, depth and rustic character of the wild microflora found on our family’s Missouri farm. This limited expression of Saison du Fermier was fermented in and aged in Pinot Noir puncheons for 8 months before being naturally conditioned in this bottle.

Längst
Bourbon Barrel Aged Adambier
Langst is our bourbon barrel-aged Adambier, a historic, strong, malty German ale that was brewed with 7 different German malts and fermented with a fruity yeast strain. This Adambier was aged for 18 months in bourbon barrels to showcase the barrel as the predominant characteristic lending to notes of dark, dried fruits, toffee, caramel, peat and leather before being bottled almost still.

M.J.K.
Barrel Aged Barleywine
M.J.K. is the culmination of our barleywine production. We brewed several new English-inspired Barleywine recipes and then double and triple barrel-aged and finished them for 31 to 32 months in Willett Family Estate Bourbon and Brazillian Amburana Barrels. Once mature, 2024 M.J.K. was blended intentfully to showcase the character of these special barrels in a deep, rich, luxurious English Barleywine.

Barrel Aged Imperial Stout
O.W.K. is the culmination of our stout production. Our favorite barrels of our O.W.K. recipe which had matured from 22 to 31 months in Van Winkle, Willett Rye, and Family Estate Bourbon Barrels from our friend Drew Kulsveen of Willett Distillery were selected. The 2023 O.W.K. was infused with and rested on Ugandan Vanilla Beans during three separate phases, adding layers of milk chocolate, decadent fudge and earthy vanilla to the rich, lucious body of this Barrel Aged Imperial Stout.

Silent Barrel showcases single barrel picks, picks which we bring others into our barrel room, sample barrels and pick the barrel which we would all like to share with our names on it. Each barrel, no matter the recipe, the age or the type of spirit it once held, has its own personality. Much like the Bourbon and Whiskey world, bottling them straight from the barrel, unblended and still, can allow us to share with you the closest thing to the barrel-picking experience.

Balaton is our Wild Missouri Brown Ale that was fermented in and aged in local Chambourcin Barrels with Missouri microflora for over a year with Michigan Balaton Cherries. We wanted Balaton to be soft, yet complex, so it is only 5% abv with a higher level of Brett influence and more impactful oak presence to balance out the signature Side Project acidity and the tart, cinnamon notes of the cherries...

Blueberry Flanders
Missouri Flanders Red-inspired Ale aged with Blueberries
Fermented and aged in a 70hL upright French Oak Foedre from one of our Napa Valley Cabernet producing friends, the base for Blueberry Flanders rested, solera-method style, for more than 4 years before being racked to a horizontal Missouri Oak Foedre with more than 4000lbs of Oregon Blueberries. After several months of re-fermentation and maturing, we bottled this beer and allowed it to naturally condition in its bottle for more than 7 months before tasting and confirming that it is ready to share with you.

Missouri Wild Ale aged in Wine Barrels with Wine Grapes
Blanc de Blancs is our Bière de Champagne that was fermented in and aged in white wine barrels with our local, Missouri microflora. After fermentation, it was aged on Missouri grapes for more than a year creating a beer that was inspired by our love of wine.

Missouri Wild Ale Aged with Black Raspberries
Fencerow begins as a Missouri Wild Ale which is aged in French oak until maturity. At maturity, we blended this base with other Missouri Wild Ales aged in Missouri and French Oak to dial in our level of acidity and complexity and to lay the framework for re-fermentation on Oregon Black Raspberries.

Fuzzy
Missouri Wild Ale Aged in Wine Barrels with White Peachess
Fuzzy is our Missouri Wild Ale that was fermented and aged in our 70hL French Oak Foedre for 2 years before being racked on to White Peaches from southeast Missouri and aged an additional 7 months as the beer refermented to dryness before being naturally conditioned in the bottle.

Raspe
Missouri Wild Ale Aged with Raspberries
Raspe is a blend of blond Missouri Wild Ales that were fermented entirely with our Missouri cultures and aged in French oak until maturity. At maturity, a blend is chosen and then moved on top of more Red Raspberries in one of our American Oak Foedres from our friends at Foeder Crafters of America.

LOAM
Missouri Wheat Saison aged with Missouri Grapes
Loam is a the type of soil that is found in the Augusta AVA about 30 minutes west of our brewery. This American Viticultural Area is the home of the Missouri Grapes we used to showcase a harmony of our Missouri Saison with Missouri Wine Fruit. We treated this beer with the beautiful fruit to extract the delicate flavors and aromatics.
